Milanesa De Res (Beef Milanesas)

Makes 6 servings

1-1/2 pounds beef Sirloin Tip Steaks, cut 1/4-inch thick (6 steaks)
3 eggs
1/3 cup all-purpose flour
1-1/2 teaspoons chili powder
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/4 cups dry unseasoned bread crumbs
Vegetable oil
6 lime wedges

Serving Suggestions:
Hot cooked rice, hot cooked mashed potatoes, salsa, guacamole
1.Beat eggs in shallow dish until blended. Combine flour, chili powder, salt and pepper in second shallow dish. Place bread crumbs in third shallow dish.
2.Dip each beef steak into flour mixture, then into eggs and then into bread crumbs to coat both sides.
3.Pour oil to 1/4-inch depth in large nonstick skillet. Heat over medium-high heat until hot. Place 1 to 2 steaks in skillet (do not overcrowd). Cook 2 to 4 minutes for medium rare doneness, turning once. (Do not overcook.) Remove steaks; drain on paper towels and keep warm. Repeat with remaining steaks and oil.
4.Serve each steak with lime wedge and Serving Suggestions or as desired.
